A beloved island favorite, Chilau is a rich and flavorful Spanish-inspired seafood dish that has been a staple in Conch kitchens for generations. Packed with fresh seafood and bold spices, this dish is a true reflection of Key West’s culinary heritage. Join us for the ultimate Chilau Showdown, where the island’s best chefs will compete in three categories:
• Shrimp
• Shrimp + Fish
• Supreme
Our celebrity judges—Paul Menta, Deborah Henson, and Martin Liz—will crown the winner, who will earn the ultimate island bragging rights as the maker of Key West’s Best Chilau! And don’t forget the Audience Favorite—your vote helps decide the people’s champion!
Note: all entries must be submitted in an electric crock pot. Drop off March 8th between 2-4pm at Williams Hall.
